Bashful Beets

Roasted beetroot is a much-loved Australian staple, packed with nutrients and high in fibre. Find out how you can soak up its health benefits by using every part of the vegetable.

Skins: Clean the skin by scrubbing off excess dirt or loose ends and cut the beets into your desired shape with the skin on. Drizzle with oil, season with cinnamon, and bake. Use the roasted beets in salads, pasta or rice dishes. Yum!

 

Leaves: Wash the leaves and stems well, pat dry with paper towel and roughly shred. Add the leaves to a pan with butter and garlic and cook until soft. This scrumptious mix makes the perfect pizza or pasta topper.

 

Flesh: Want to spice up your slaw? Finely chop your beetroot and combine with grated carrots, cabbage. Top off with pecans, sultanas and parsley and your favourite dressing. This delicious combo makes the perfect side to burgers and tacos!
