Cook like an Italian with Silvia Colloca as she shares her favourite family recipes along with top tips to avoid food waste.

And you will see in the series, Italian home cooks learn from a young age that resourcefulness in the kitchen can save time and money – and reduce food waste.

In Season 3, Silvia explores her timeless Italian passion for homemade ingredients, the family rituals that many Italian-Australians still use today to eat well, and the importance of teaching new generations about the importance of food.

Silvia shares some of her favourite family recipes using classic versatile ingredients, along with great tips on how to cook smart to avoid food waste.

The art of breathing fresh new life into leftovers is one of the most valuable things Silvia learnt from her mother.

For the perfect demonstration of this check out episode 3 where Silvia and her mother take pasta leftovers and completely reinvent them as a delicious homemade spaghetti frittata.

Frittata di spaghetti (spaghetti frittata)

Ingredients
  • 35 g ( cup) grated parmesan, plus extra to serve
  • 100 ml milk
  • salt flakes and ground black pepper, to taste
  • 300 g cold leftover spaghetti (in any kind of sauce – tomato, ragu, puttanesca, carbonara)
  • 80 ml (  cup) extra-virgin olive oil
  • oregano leaves, optional
Instructions
  1. Place the eggs, cheese, milk, and a little salt and pepper in a large bowl and beat until well combined. Add the leftover spaghetti and combine.
  2. Heat 2 tablespoons of the olive oil in a 20 cm non-stick frying pan over medium-high heat. Add the egg mixture and swirl it around to cover the base of the pan. Cook for 3–4 minutes or until you can see the underside is turning golden brown. Slide the frittata onto a plate.
  3. Add the remaining oil to the pan and allow it to get hot. With one swift and confident movement, tip the frittata upside down into the pan so that the golden bottom is now on top. Cook for 2–3 minutes, then slide onto a serving plate.
  4. Top with extra parmesan and oregano if using, then cut into wedges and serve warm or cold.
